I have a propane grill. It's fine. I use it on weeknights when I need dinner done in 25 minutes and I'm not in the mood to manage a fire. But every summer weekend when we actually have time — that's charcoal. Every time.

There's something about a charcoal grill that changes the whole cooking experience. You're managing the fire. You're adjusting the vents. The smoke smells different. The sear is different. The crust on a burger or a steak over actual charcoal is not something you can replicate on a gas burner. I'm not being romantic about it — it's just a different (and better) result.

The 22-inch kettle is the right size for a backyard family setup. It's big enough to handle a full chicken, a rack of ribs offset, or a dozen burgers for a cookout without being so large that you need enormous amounts of charcoal to reach temp. Weber has made this size the standard for a reason.

For setup and learning curve: the kettle design is forgiving. Two-zone cooking — all the charcoal on one side for direct heat, nothing on the other side for indirect — gives you total control over everything from quick sear to low-and-slow. The vents at the top and bottom are your temperature dial. Open = hotter. Close = cooler. You'll figure it out in one cook.

If you're buying for Father's Day or as an upgrade, the original Weber Kettle 22" has been around forever and is the benchmark. There are good alternatives in the $100-130 range that give you the same cooking surface — look for 4.7+ stars and verified reviews, not just the cheapest option.

Why you get it: it forces you to slow down. You can't rush charcoal. And on a Saturday with nowhere to be, that's kind of the point.

In our house

I own both propane and charcoal. Propane is for Tuesday nights. Charcoal is for weekends when the whole point is the experience. The kids eat better off the charcoal grill too — I don't know how to explain that but it's true.
